This aged cow’s cheese is the result of a careful process that begins with the coagulation of whole milk, after being pasteurized. The cheese has a matte white paste, is semi-hard and has nuts distributed irregularly throughout the mass. Its texture is semi-hard, becoming soft when cut. It has a regular cylindrical shape, with rounded edges, a slightly convex upper and lower face and a slight lateral bulge. The crust is uniform, well-formed and slightly rough, coated with a beige copolymer aqueous solution.
It has a mild aroma and a characteristic nutty flavor.
