Vinification:
Manual harvest in installments, with choice. Crushing with direct pressing. Fermentation in stainless steel vats with temperature control (individual per vat). Stage of 5 months or stainless steel vats.
After the first years of consolidating a production of consistently high quality wines, Quinta do Monte d’Oiro entered a new phase of its history from the 2006 harvest, launching a new image to the market and wines from of a conversion to organic farming. Of the 42 ha of the property, only 15.5 ha were replanted with the Syrah, Viognier and Petit Verdot varieties, imported directly from their original regions in France, and with the Portuguese varieties Touriga Nacional and Tinta Roriz. There is a concern to produce grapes with low production yields, increasing the enological quality that is intended for the wines. From the 2006 harvest onwards, there were two wine families: Quinta do Monte d’Oiro Family and José Bento dos Santos Originals Family, wines by the producer.
