Manual harvest in 20kg boxes. Reception with total destemming, crushing, followed by cold maceration for 2 days at a temperature of 10ºC. Partial fermentation in 500 liter French oak barrels with indigenous yeasts and in stainless steel vats at a controlled temperature of 17ºC.
