Selected harvest (only bunches of timely sticks are selected). Grapes harvested manually in small boxes and transported to the cellar in a short time. Half of the batch makes total fermentation with the films. The other half ferments with the whole bunch not desengado. After fermentation the lots are gathered in French oak barrels where they perform a 9-month stage with regular bâttonage.
