Grapes harvested manually in small boxes and transported to the cellar, in a refrigerated environment, in a short time. Pressing the whole grape desengaçada. Cold clarification 48h-72h. Long fermentation at low temperature: 14-18ºC. Minimum stage of 4 months on fine lees with regular bâtonnage.
