Grapes harvested manually in small boxes and transported to the cellar in a short time. Total desengace. Gentle pressing of the whole grape. Extreme clarification of the must by cold. Long fermentation at low temperature: 12-16ºC. Minimum stage of 3 months on fine lees with regular bâtonnage.
